The One Kidney Diet: Breakfast Tacos

Breakfast Tacos

Macros to keep an eye on:
  • Protein: 30g out of a 60g daily goal
  • Carbs: 27g
  • Fat: 38g
  • Calories: 600

What you’ll need:
  • 2 eggs
  • A handful of green peppers and red onions, chopped up
  • 3 breakfast sausage links
  • 2 slices of bacon
  • 2 corn tortillas
  • Some olive oil spray
  • (Optional) A bit of spinach

How to whip it up:
  1. Start with heating your (toaster) oven to about 325°F.
  2. Cut up the bacon and sausage into smaller pieces.
  3. Chop the green peppers, red onions, and maybe some spinach if you’re feeling it.
  4. Heat up a pan over medium and spray it with a bit of olive oil.
  5. Toss in the bacon and sausage bits.
  6. While that’s cooking, spray your tortillas with olive oil and pop them in the oven for 5 minutes.
  7. Once the meats look good and browned, add in the peppers and onions.
  8. If you went for spinach, now’s the time to throw it in and give it a mix.
  9. Crack in the eggs and stir around until they’re cooked nicely.
  10. You’re done when the eggs are cooked. Put it all on a plate.
  11. Don’t forget to add some Tapatio (a.k.a Condiment of the Gods)

A bit on the side:

Dealing with eating limits like only 70g of protein and enough water a day means you gotta be smart about what you eat. These tacos are great for breakfast and fit pretty well into the ‘plan’. Just gotta watch what you eat for the rest of the day. But hey, it’s worth it for tacos.

There you go, breakfast tacos that are easy, tasty, and get you ready for whatever nonsense life will throw at you today.
